Dark Chocolate Orange Avocado Mini Muffin Pops
Makes approximately 60 mini muffin pops.
Ingredients:
3 packages 20-count 6” cookie sticks
¾ cup special dark unsweetened baking cocoa
2 cup organic unbleached white flour
2 teaspoons baking powder
1 teaspoon baking soda
⅔ cup organic cane sugar
½ cup organic brown sugar, packed
¼ teaspoon sea salt
½ cup dark chocolate chips
1 dark chocolate orange candy bar, 3.2-ounce, broken up
1 ripe avocado
½ cup almond oil
2 large organic cage-free eggs
1 container of orange yogurt, 6-ounce
½ cup organic whole milk
½ cup organic naturally sweetened orange juice
1 teaspoon organic orange flavor
Zest from 1 tangerine
Sprinkles
Instructions:
1. Prepare Display Gift Box in advance.
2. Generously grease mini muffin pans, including the top of each pan so that the muffin tops don’t stick.
3. Preheat the oven to 350F.
4. In a large mixing bowl, sift dry ingredients together, breaking up and balled-up brown sugar and/or cocoa and re-sifting them.
5. Put the dark chocolate chips and the broken candy bar pieces into a food processor until they’re a crumbly powder. Add to the dry ingredients.
6. Put the avocado in the food processor with ¼ cup of oil and purée them until they’re smooth and creamy. Scoop the puréed avocado (it should be about one cup) into a separate small mixing bowl.
7. Beat the eggs and add them to the avocado, mixing until they’re light and creamy.
8. Add the remaining oil (¼ cup) to the avocado mixture, and blend well.
9. Add the yogurt, milk, juice, flavor and zest to the avocado mixture one at a time until well blended.
10. Make a well in the center of the dry ingredients.
11. Pour the liquid ingredients into the center of the well.
12. Blend the wet and dry ingredients together gently until the batter is moist. Don’t over mix it.
13. Fill each hole in the mini muffin pans ¾ of the way using a teaspoon.
14. Bake for 15 minutes or until an inserted toothpick comes out clean.
15. Cool the muffins on a wire rack.
16. Dip each muffin in Chocolate Orange Glaze and top with sprinkles.
17. Let the glaze harden before inserting a cookie stick into the bottom of the muffin to create a muffin pop.
18. Insert muffin pops into Display Gift Boxes or put them in glasses stuffed with colorful tissue paper.
Chocolate Orange Glaze
Glazes approximately 24-36 mini muffins.
Ingredients:
1 cup powdered sugar
3 tablespoons special dark unsweetened baking cocoa
3-5 tablespoons boiling water
½ teaspoon organic orange flavor
Instructions:
1. In a small mixing bowl combine the powered sugar, cocoa, water and flavoring. Stir until creamy and smooth.
2. Use before it hardens.
Display Gift Box
Need:
1 rectangular foam brick (66mm x 88mm x 200mm)
1 sheet of wrapping paper or tissue paper
1 ribbon
Scissors
Tape
Instructions:
1. Wrap foam brick in wrapping paper or tissue paper like a present.
2. Decorate it with a ribbon.
3. Make 8-10 holes in the foam brick through the wrapping paper with a sharp pointed object, like a pen, where you want the muffin-pops to stand.
4. Push the muffin-pop sticks into the foam through the wrapping paper until they are secure. Note: one foam brick holds 8-10 muffin pops.
