Mom Behind the Muffins

Muffins with a Secret is a collection of recipes I made when I was a stay-at-home mom with a picky eater. Making these recipes was not only a fun way to get my son to eat his veggies, but it was also a creative outlet for me. Since so many of our friends have enjoyed these recipes over the years, I decided to make them available for you, too!

Feel free to play with these recipes, substituting ingredients so they meet your dietary needs; for example, you can use lactose-free milk for most recipes if your child is sensitive to dairy. I’m in the process of creating gluten-free recipes and dairy-free recipes, as well as shortcut recipes for the busy working mom.

These muffins are dressed up like cupcakes in most of the recipes. I thought they’d be a fun, healthy alternative to cupcakes for birthday celebrations. If you want to skip all the sweet, you can make any of these recipes minus the glaze, whipped cream, or caramel toppings.

I now teach at Syracuse University, and I live with my son, Kingston, and his fish, Swimmer, in Syracuse, New York. Some of my favorite things to do are off-roading in my Jeep, playing board games with my son, getting a hot stone massage, and creating new recipes.
